Stacked Kofta

Ratatouille met kofta and decided to get married……I think they made the most beautiful baby.

Stacked Kofta by @cookwithdena

  • 4lbs ground beef 80/20
  • 1  red onion
  • 1 jalapeño deseeded 
  • 4 cloves garlic
  • 1 1/2 c cilantro 
  • 1 tbs seasoned salt 
  • 1 tsp black pepper
  • 1 tbs Montreal steak seasoning 
  • 1 tsp allspice 

Mix all ingredients list above except for the meat, in a blender, blend until it looks like a rough paste. Add the blended mix to the meat in a large bowl and mix the Kofta together using your hands.

For the Stacked Kofta:

  • Kofta
  • 4 russet potatoes sliced 
  • 6 Roma tomatoes sliced

The sauce:

  • 1/2 c water
  • 2 tbs tomato paste
  • 1/4 c olive oil
  • Salt and pepper 
  • Mix together 

In a baking dish alternating layers of Kofta, potato and tomato, repeat until tray is full or you run out of ingredients. Pour sauce on top of stacked Kofta. Bake in a preheated oven at 450f for 45 mins covered, and the uncover until potatoes are fully cooked and is slightly browned.
