Fateh is basically a side dish known in the Arab countries. There’s so many different ways of making a great Fateh. There’s this the eggplant Fateh, chicken fateh, hummus fateh…. One thing they all have in common is the fried pita, creamy yogurt and tahini sauce and garnish. Here’s the recipe for my eggplant Fateh. The ground beef in the recipe is completely optional you can totally make this vegetarian and eliminating that part.

Eggplant Fateh
⁃ 2 eggplants cubes and fried
⁃ 5 pitas cut into bite sized pieces and fried
⁃ 1 pound ground beef, sauté with 1tsp black pepper, 1tsp seasoned salt, 1/2 tsp allspice, 1/2tsp paprika until fully cooked.
⁃ 1c fried Almonds or Pinenuts
⁃ 4c Arabic or Greek style yogurt, mixed with 1/2 cup tahini, 1/4c Toum sauce(if unavailable use 6 cloves of garlic crushed) 1/2tsp salt.
⁃ Chopped parsley
⁃ Pomegranate seeds for garnish and a pop of flavor
In your serving bowl layer before serving if this dish sits too long it gets soggy. I don’t recommend more than 30 minutes before serving to assemble.
