
Chicken Maklouba

Ingredients
⁃ 1 chicken quartered
⁃ 1 1/2c Egyptian rice washed and soaked
⁃ 1 1/2 c sella basmati rice washed and soaked
⁃ 1 cauliflower cut into florets
⁃ 1 eggplant cut into inch thick half circles
⁃ 1 russet potato cut into 1/2 inch half circles
⁃ 1 tomato sliced
⁃ Frying oil
⁃ 6c liquid, either water, chicken broth, or the chicken juices from the pan with water to equal 6 cups of liquid.
Spices Needed
⁃ Allspice powder
⁃ Cardamom powder
⁃ Cumin powder
⁃ Seasoned salt
⁃ Chicken Bouillon powder
⁃ Black pepper
⁃ Garlic powder
Preheat your oven to 400f

Chicken:
In a baking sheet, add in the chicken w a drizzle of olive oil and the following seasonings.
• 1 tbs seasoned salt
• 1 tsp black pepper
• 1/2 tsp cumin powder
• 1/4 tsp allspice powder
• 1/2 tsp garlic powder
• 1/4 tsp cardamom powder
Bake in the oven for 45 mins, drain all the drippings from the pan and reserve to use for the Maklouba. After this point it’s your decision if you want to put the chicken in the dish or bake until browned to your liking.
Rice:
Wash the rice three times and then soak for about 45-60 mins. Drain with a strainer. And then add in the seasonings to the rice.
• 2 tbs chicken bouillon powder
• 1 tsp black pepper
• 1 tsp cumin powder
• 1 tsp cardamom powder
• 1/2 tsp allspice
• 1/2 tsp garlic powder
Set aside until all the veggies are fried till golden.
Veggies:
Fry them on Medium high heat until golden. Sprinkle with salt after frying. Set aside.
Assembly:
In a nonstick pot layer as follows:
1. 1 thinly sliced tomato
2. The chicken skin side down (or you can keep the chicken on the side and assemble the maklouba with just the veggies)
3. The fried veggies
4. The seasoned rice
5. The chicken drippings + water to equal 6 cups of liquid.
Bring the pot to a boil on medium high (never on high heat)
Once it starts bubble, place foil, or a kitchen towel before putting on the lid. To trap all the steam.
Once tightly covered, reduce heat to medium low for 20 mins.
Once timer finishes check the rice if finished.
If not leave it covered until rice is finished.
Flip onto a large heat safe tray and enjoy.
