
Instant Pot Qidreh

This meal is traditionally cooked in a clay pot. It’s a very old Palestinian meal that’s getting over looked these days. I still used a pot to cook it, an Instant Pot Lol, and served in individual clay pots. The spices are very straightforward, but I’m using a prepared spice mix that I found at the Arabic store.
Here’s the ingredients:
• 3.5 lbs 2×2 inch cube of boneless beef
• 6 heads of garlic peeled
• 6 c of pearl onions peeled
• 3 c of Sella Basmati rice
• 2 c of Calrose or Egyptian rice
• EVOO about 1.5 cups
• 3 tbs Qidreh spice (turmeric, garlic powder, onion powder, chili pepper, cinnamon, nutmeg and salt)
• 2 tbs chicken bouillon powder
• 2 tsp black pepper
• 2 cans of garbanzo beans
• 1 c of toasted almonds
• Parsley for garnish
Let us start by preparing the onions and garlic.
• Preheat your oven to 350f
• In a baking dish, add in the garlic and onions along with one cup of EVOO.
• Sprinkle salt and mix together
• Bake in the oven and mix every 10 minutes until golden brown.
• Set aside until needed
Now for the meat.
• Turn your Instant Pot onto the sauté feature
• Sprinkle 1 tbs of Qidreh spice and 1 tsp black pepper onto the meat
• Add in 1/2 c of EVOO into the Instant Pot
• Sear the meat in two batches to reduce over crowding
• Return the meat to the Instant Pot
• Add in 8 c of water
• 2 tsp of chicken bouillon powder
• Turn off the IP close it. Close the venting, and turn it on the meat setting for 30 minutes.
For the rice:
Wash the rice until the water runs clear and soak it for 30 mins. Drain and in a bowl add to the rice the garbanzo beans drained. Add in the rest of the spices that were pre measured. Mix together and set aside until the meat is ready.
Once the meat is ready:
Instant release the pressure, add in the garlic and onions along with any oil in the baking dish, then add in the rice garbanzo bean mix and close the Instant Pot.
Turn it on manual pressure for 10 minutes.
Keep on warming for 10 minutes.
Flip onto a serving platter and top with toasted almonds and parsley.
