Burrata & Pumpkin Autumn Salad

So simple, but so delicious!

Pan fry cubed pumpkin in some olive oil. Place on top of a bed of baby arugula then sprinkle on some diced red onion, some dried cranberries then drizzle fig Balsamic glaze and sprinkle some coarse salt on top.
