Rabieyeh or Green Fava bean Maklouba

This dishes name literally translates to Springtime. Green, tender fava beans are in season, so let’s make a delicious Palestinian dish together!⁃ 4 pounds lamb with bone cubes ⁃ 2 pounds green fava beans. Washed and trimmed, and cut into inch length pieces ⁃ 2 onions diced ⁃ 4 cups sella parboiled basmati rice washed and strained ⁃ 8 cups hot water or meat broth ⁃ 2 tbs chicken or vegetable flavored seasoning ⁃ 1 tsp black pepper ⁃ 1 tsp seven spice ⁃ 1/4 cup olive oil

I like to cook my meat in an electric pressure cooker for 25 minutes high pressure instant release. I add in all the seasonings and strain the broth for the next step.
In a large nonstick pot, sauté the onions and fava beans in the olive oil. When the fava beans have started to get a little browned add in the rice and spices. Add in the water, bring to a boil, cover and lower the heat for 20 minutes. Check the top layer of rice. Flip onto a large platter and serve with yogurt or chopped Palestinian salad.
