Easy Vegetarian Maklouba

-3 c Jasmine rice/ or 1.5 c Egyptian rice and 1.5 c sella basmati rice washed, soaked for 30 minutes and drained.
-1 large head of cauliflower cut into large florets and fried till golden.
-2 russet potatoes peeled and cut into large cubes and fried.
-1 c baby carrots fried . (Optional)
-1 eggplant sliced and fried
-4 tbs vegetable soup powder
1 tsp black pepper
1 tsp cumin
1/2 tsp turmeric powder
1 tsp allspice
1/2 tsp cardamom powder
1 tomato sliced

*Directions:
*In a bowl mix the soaked and strained rice with all the spices.
*In a nonstick pot you assemble the maklouba. Tomato slices, fried veggies , spiced rice, 7 cups of hot water or vegetable broth. Bring to a boil, cover with foil and lid and lower the heat to low until rice is fully cooked. About 20-25 minutes on low.
*Flip onto serving platter and devour!
