Eggplant Bake

Ingredients:
• 1 large eggplant sliced into 1 inch slices
• 1 lb ground beef
• 6 ripe tomatoes puréed
• 2 tbs tomato paste
• 1 onion chopped
• Shredded mozzarella
• 3 c water
• 2 tbs Worcester sauce
• 2 tbs chicken bouillon powder
• 1 tbs vegeta
• 1 tbs black pepper
• 1 tsp allspice
• 1/2 tsp cardamom powder
• 1/2 tsp cinnamon powder
Brush both sides of the eggplant slices with oil and salt. Broil on both sides till a little browned. In a pot sauté the onion for five minutes then add in the beef. Break it up and keep stirring for ten minutes. Add in the spices and sauté the five minutes more. Add in the tomato purée, paste and water and let simmer for 15-20 mins on low heat.
In a 9×13 Pyrex put a thin layer of the meat sauce. Put next a layer of eggplant, top with half of the meat sauce, and a layer of shredded mozzarella. Repeat with the second layer. Bake in a 400 oven uncovered until golden.
