Shakshuka

⁃ 8 Roma tomatoes cut into eights or a large container of grape tomatoes
⁃ 4 cloves of garlic cloves halved
⁃ 1 jalapeño halved
⁃ 5 tbs extra virgin olive oil
⁃ 1 tsp salt
⁃ 4-6 eggs
Preheat your skillet, and add in your oil, garlic and jalapeño. When it starts to sizzle, add in the tomatoes and salt.Only mix once the veggies start to get some color to them. Cover and mix every few minutes. You want the tomatoes to almost caramelize. One they look a little browned about ten minutes later, smush the tomatoes. Lower the heat and then add in the eggs without stirring. Cover the skillet until the eggs reach the firmness you desire.
