Corn Beef Hash

A quick and easy recipe for when you’re not sure what to make or don’t feel like going through too many dishes.

Prep time: 5 minutes
Cook time: 15-20 minutes
Serves: 3-4

Ingredients:
⁃ 1 large Russet potato peeled, diced and soaked in water for ten minutes and drained.
⁃ 1 onion diced
⁃ 5 eggs
⁃ 2 tbs olive oil or butter
⁃ 1 can of Corned Beef
⁃ 1/2 tsp black pepper
Directions:
Preheat your skillet on medium high heat, add in the onions until slightly browned. Add in the potatoes and stir every few minutes so the potatoes can crisp on all sides. Check a potato to see if it’s cooked. Once it is, add in the corned beef and black pepper. Corned beef is basically already cooked so our goal is to reheat and crisp up the bottom of our skillet. At this point you can make wells in the hash to crack your eggs in. I like to do that and cover the skillet until the whites are solid.
