Ginger Kale Salad

This salad was inspired by my sister Jenean’s favorite salad at Central Market. She described it to me and actually brought with her their dressing. So I’ll give you the salad base and suggest you get your favorite sesame ginger dressing to serve along side the salad.

Ingredients:
⁃ 6 c chopped kale
⁃ 1/2 c thinly sliced candied ginger
⁃ 1 c dried cranberries
⁃ 1 c toasted sliced almonds
⁃ Pomegranate seeds to garnish
That’s all! It’s such a simple concept but the longer the salad marinated in the dressing the better it tastes. I recommend adding the dressing to the salad two to three hours before serving.
