Instant Pot Chicken and Rice Soup
This soup makes the soul feel good! It’s so creamy and filling.

Ingredients:
⁃ 1 whole chicken, cut into 8 pieces and skinned. Or 6 skinless chicken leg quarters.
⁃ 1 onion chopped finely
⁃ 4 cloves of garlic crushed
⁃ 2 inch knob of fresh ginger peeled
⁃ 3 tablespoons of olive oil
⁃ 2 tablespoons of chicken bouillon powder
⁃ 1/2 teaspoon of turmeric powder
⁃ 1/2 teaspoon of white black pepper
⁃ 4 bay leaves
⁃ 3/4 cup of Cal Rose rice or Egyptian rice washed and set aside
⁃ 8 cups of water
⁃ Carrots are optional but one cup of diced carrots is a delicious addition
Directions:
⁃ Turn the Instant Pot to the high sauté feature
⁃ Once hot, add in the oil and chicken. Sauté for about five minutes
⁃ Add in the veggies and seasonings. Once the onions get translucent go onto the next step
⁃ Add in the water and rice
⁃ Cover the instant pot and make sure the valve is closed, turn off the sauté mode.
⁃ Press the poultry or soup mode for 20 minutes, instant release the pressure
⁃ Serve with some fresh lemon juice, toasted pita, olives, green onions, fresh herbs etc..
