
Palestinian Chopped Salad
The perfect accompaniment to any meal, especially rice dishes.
The ingredients are:
one red onion chopped finely, eight Roma tomatoes chopped finely, one large English cucumber diced finely, and half cup parsley. If you have any other veggie you want to add feel free too. Finely chop all the vegetables and place in a bowl.
The vinaigrette is super simple: three fresh lemons juiced, a third cup of extra virgin olive oil, 1 1/2 tbs Sumac, a teaspoon salt, a forth teaspoon of black pepper. Whisk together and add to the salad.
Try to add the vinaigrette before serving, otherwise the salad will get a little soupy.
