Palestinian Freekeh Pilaf

Freekeh (green wheat) is a great way to change things up when you’re tired of rice dishes! In Palestine we always have this roasted green wheat stored away in our pantry. To preserve it after roasting they rub in some Olive oil and some salt.

Here I added seasoned beef and some peas and carrots to the pilaf. This part is totally optional but definitely delicious. I serve it with my chopped Palestinian salad and some roasted chicken.

Green Wheat pilaf 

Ingredients:

  1. 3 cups green wheat, skimmed for rocks or any particles that aren’t wheat. Washed and soaked for 30 minutes then drained.
  2. 6 cups hot water
  3. 1/3 c extra virgin olive oil
  4. 2 tbs chicken or vegetable flavored bouillon
  5. 1/4 tsp seven spice
  6. 1/4 tsp black pepper

In a pot, sauté the oil and wheat together until it sizzles, add in the seasonings and water. Let it come to a rolling boil. Cover and lower the heat to the lowest setting and leave it covered for 30 minutes. It may look wet when you take the lid off but the liquid dries up very quickly as soon as it’s uncovered.
