
Sumac Crusted Lingcod Filet
⁃ 1/2 lb cod filets, thawed and pat dried
⁃ 1 tbs sumac
⁃ 1/2 tsp granulated garlic
⁃ 1/2 tsp pink salt
⁃ 1/4 tsp black pepper
⁃ 1 tbs olive oil
⁃ 1/2 c grape tomatoes optional
Mix the spices together and sprinkle on both sides of the filet. In a preheated skillet on medium high, add the oil, sear the seasoned fish top side down first for 3 minutes on each side. As soon as you place the fish in the skillet add the grape tomatoes to the skillet to they can get carmelized.
You can also bake this dish as well, in a baking sheet, place the sumac crusted fish in a 400f oven for 18 minutes, uncovered.
