Squash Pulp Skillet

Once you make this delicious dip, you will never waste the insides of your gray or yellow squash! In Palestine, we waste nothing. Literally!

Ingredients:
⁃ 3 c of squash pulp
⁃ 1 onion diced
⁃ 1/4 c olive oil
⁃ 1 tsp black pepper
⁃ 1 tsp salt
⁃ Large skillet and a wooden spoon
On high heat the entire time, layer the ingredients in the skillet as follows: oil, onion, squash, salt and pepper. Don’t stir it until you see that the onions are developing some color. Just give it a stir and don’t worry if the squash is releasing a lot of its juices. Our goal is to caramelize the ingredients. After five or so minutes stir it around. If you see that the bottom has turned brown scratch it and mix it with the rest of the skillet. This is what give the most delicious flavor. When you get that caramelization…< I don’t think that’s a word but it’s ok.. your ready to serve. I like to sprinkle pomegranate seeds ontop and warm pita bread.
