Yalnji (Vegetarian Grape Leaves)

(Yaa – lun – jee)

Yalnji (vegetarian grape leaves)
⁃ 4 c Egyptian rice washed and soaked for an hour and drained
⁃ 1 red onion finely diced
⁃ 4 Roma tomato’s finely diced
⁃ 1 c finely chopped parsley
⁃ 3/4 c of fresh mint finely chopped
⁃ 4 lemons squeezed
⁃ 3 tomatoes sliced
⁃ 1 jar of grape leaves
⁃ 1 c extra virgin olive oil
⁃ 1 tsp black pepper
⁃ 3 tbs vegeta or vegetarian soup starter
⁃ 1 tsp citric acid
⁃ 1 tbs pomegranate syrup
⁃ 3 tbs dried mint crushed
Mix all ingredients but the sliced tomatoes. Put the rice filling in a strainer and save those juices. Fill and roll your grape leaves. In the bottom of your instant pot. Put in the sliced tomatoes and if you like a russet potato sliced you can add this as well. Layer in your filled grape leaves. Add in the reserved liquid from the filling and add one cup of water. Turn the instant pot to pressure, for 45 mins. Let it stay on warm for about ten mins. Once pressure is released flip the grape leaves onto a serving tray and enjoy!
