
Bukhari Rice
(boo – ka – ree)
Bukhari in Arabic translates to steamed. This is a simple steamed rice recipe that can be made using your instant pot or stove top!
(Can be made in either Instant pot or stovetop, the recipe is exactly the same except the cook time)
Ingredients:
4 c Sella or Parboiled Basmati Rice
30oz. Shredded carrots
2 onions thinly sliced
4 cloves of garlic crushed
Golden Raisins for garnish as well as parsley
Spices:
⁃ 3 tbs chicken bouillon powder
⁃ 1/2 tsp turmeric powder
⁃ 1/2 tsp cinnamon powder
⁃ 1 tbs black pepper
⁃ 2 tsp allspice/seven spice either one
Steps:
Either in your stovetop or instant pot.
Sauté in 1/4 cup frying oil, your onions and garlic till soft or slightly golden.
Add in the carrots and stir until they start to get a little soft. About 6 mins.
Add in the spices, and the rice. Mix well.
Add in 8 cups of water. And bring to a boil.
If using a stovetop pot, cover the rice and lower the heat to the lowest setting for 20 mins
If using an Instant Pot. Turn off the sauté and cover with the pressure cooker cover, close the release valve. Press the rice button and let it go for 12 mins, and warm for 10. Release the pressure and that’s all!
Garnish with golden raisins, chopped parsley and if you like fried almonds.
