
Beef and Veggie Stew
A instant pot stew recipe that’s can be served with a side of rice or all alone!
Ingredients:
1. 2 pounds of tender chuck cubed
2. 2 pounds of frozen mixed veggies
3. 1 onion diced
4. 1 russet potato cubed small
5. 1 can of diced tomatoes
6. 1 large can of tomato sauce
7. 4 c water
8. Seasonings
⁃ 2 packets of Sazon
⁃ 3 tbs chicken bouillon powder
⁃ 1 tbs black pepper
⁃ 1 tbs seven spice
⁃ 1 tsp garlic powder
Turn the Instapot onto the Sauté setting
In 4 tbs olive oil sauté the onions till translucent, add in the beef and spices. Two minutes later add in the potatoes and stir together. Then add in the frozen veggies, tomato sauce and the diced tomatoes along with the water. Turn off the sauté setting and press the meat option for 19 minutes. Serve next to rice.
