
Shrimp Curried Rice
A simple rice that’s quick and easy to make!
Ingredients:
⁃ 2lbs shrimp peeled and deveined
⁃ 3 cups Parboiled Basmati rice
⁃ 1 bag frozen peas and carrots
⁃ 1 small red onion
⁃ 1 inch of fresh ginger
⁃ 1 head of garlic peeled
⁃ 1 jalapeño
⁃ Canola oil
⁃ 2 tbs Biryani spices
⁃ 1 tbs curry powder
⁃ 1 tsp of each paprika, cardamom, black pepper, salt and red chili flakes
Shrimp Biryani Steps:
⁃ In a blender, purée the onion, garlic, ginger and jalapeño with a 1/4 c of canola oil.
⁃ In a preheated pot add in the purée and sauté with half of the spices as well as half of the Biryani spice box.
⁃ Toss the rest of all the seasonings on the shrimp and set aside.
⁃ Add into the pot the peas and carrots and sauté for a few minutes. And then add in the rice and 6c of water. Check the salt and adjust to your liking.
⁃ Once the rice reaches a boil, cover and lower the heat.
⁃ Once the rice is about 15 mins into cooking or halfway cooked, stir in the raw seasoned shrimp. And keep covered of low until the rice is fully cooked. Serve garnished with cilantro.
