Chicken Spinach Stew

Quick and easy stew that can be served with rice and a squeeze of lemon.

In this stew I’m using boneless, skinless chicken breasts. Usually I make it with bone in chicken, to replace that I’m using a bone broth.

Prep time: 15 minutes
Cook Time: 45 minutes
Servings: 6-8 people
Ingredients:
    ⁃    6 chicken breasts cubed
    ⁃    5 bunches of whole leaf spinach washed and cut finely
    ⁃    1 onion diced
    ⁃    5 cloves garlic crushed
    ⁃    1 can garbanzo beans washed and drained
    ⁃    1 carton chicken bone broth
    ⁃    1/4 cup olive oil
    ⁃    Seasonings
    ⁃    3 tbs chicken bouillon
    ⁃    1 tsp black pepper
    ⁃    1/2 tsp cardamom
    ⁃    1 tsp all spice powder
    ⁃    1/2 tsp salt
Directions:
In a very large pot. Sauté the onions and garlic in the olive oil for 2-4 minutes. Add in chicken and seasonings stir together and cover for 10 minutes. Give it a stir every couple minutes so the bottom doesn’t burn. Add in the spinach, stir and cover for 8 minutes. Add in the garbanzo beans and chicken bone broth. Cover and let simmer for about 10 minutes. Serve with rice, and a squeeze of fresh lemon.
