Mamoul

Middle-eastern shortbread cookies filled that can be filled with dates or nuts. These are typically served on Eid and other special occasions.

5 c. fine semolina

2 5oz. cans of table cream 

1 3/4 c. butter flavored crisco or ghee 

1 cup flour

1 cup sugar 

1tbs baking powder 

1 tsp Mahlab (optional) 

Mix flour, semolina and sugar with the butter flavored Crisco or Ghee over night covered countertop. At least 8 hours to 48 hours later, mix in the table cream, mahlab and baking powder. The mixture is now ready to be formed and filled.

For the Date filling:

35oz of date paste

1 tbs cinnamon powder

1 tsp allspice

1/4 c olive oil

Knead the mixture very well and for date balls using the tsp measuring tool.

Use the tbs measuring tool for the outer shell.

I use the moon cake molds, I spray it before using to abound the mamoul sticking.

Make a bowl in your palm w the outer shell, place a date ball, flattening it lightly. Wrap the shell around the date filling as showed in the video. Stamp them or mold them how you like. Bake in a preheated oven at 350f for 15-18 mins until lightly golden brown.

Sprinkle with powdered sugar ontop and enjoy.

Let cool completely and store in an airtight container. I don’t know how long these last stored they usually don’t make it past three days in my home..
