Kabs in Arabic translates to ‘press.’ Kabseh is a Middle Eastern mixed rice dish where all the ingredients are cooked (pressed) in one pot.

IP Kabseh with Lamb
-4 tbs Kabseh spices
-2 tbs bouillon powder
-1/2 tsp turmeric
-1 tsp black pepper
-3 bay leaves
-1 cinnamon stick
-2 dried lemons
-4lbs lamb w bone
-1 can diced tomatoes
-1 onion chopped
-1 inch fresh ginger
-4 c basmati sela rice
Sauté the onion and ginger with
1/4 c oil for 5 mins
Add in the lamb, spices
And diced tomatoes
And sauté for 5 more mins
Add 4 cups of water
And mix together
Turn off the sauté
And close the lid
Close the pressure valve
Press the meat button
And set it for 40 mins
High pressure, release
Pressure when done
Have the rice ready
And the nonstick
Instant pot liner ready
When meat is done release pressure immediately
Place the meat into
The nonstick pot, along
With the rice, and using
A strainer add in 6 c broth
Close lid and press
The rice button for 12 mins
Instant release
Serve topped with toasted almonds and chopped parsley
