You can use any tender piece of red meat. My favorite for this dish is beef tenderloin. This is a delicious Palestinian dish that you eat straight out of the skillet with pita bread.
Ingredients:
⁃ 2 lbs beef tenderloin cut into 1/2 inch cubes
⁃ 2 red onions diced
⁃ 4 cloves garlic crushed
⁃ 1 c diced tomatoes
⁃ 1/3 c olive oil
⁃ 1 tsp salt
⁃ 1/2 tsp seven spice
⁃ 1/2 tsp garlic powder
⁃ 1/4 tsp red chili flakes
⁃ 1/2 tsp black pepper
⁃ 2 tbs pomegranate molasses
Mix the meat with the seasonings until ready to use.
In a large skillet sauté the onions in olive oil till they start to develop color, add in the garlic and tomatoes. Sauté until the tomatoes soften, add in the meat. Spread it out and only stir every minute for about 6-8 minutes. Serve with toasted bread, radishes, cucumbers and tomatoes, yogurt and olives!
