
Chicken Fateh:
Fateh is a type of dish in Middle Eastern cuisine, that usually consists of toasted or fried pita bread with all sorts of other toppings, and is usually topped with a yogurt based sauce to marry all the flavors together.

This is a delicious main course or a side dish perfect for any occasion.
It’s a great way to also repurpose leftover chicken and rice or stale pita bread.

Over seas this dish was created as a way to use up stale pita bread as a lot of our other favorite dishes like Fatoush were created.
Chicken fateh, consists of boiling chicken in a flavorful broth, using a part of the broth to cook the rice in and shredding the chicken to serve in the Fateh. Toasting the bread or frying it. I prefer the more calorie heavy version. Making a delicious tahini yogurt sauce that mixes the entire dish together. And is topped with fried almonds or pine nuts. And a sprinkle of chopped parsley very very common garnish in Middle Eastern cuisine.
To start we will list the ingredients.
For the chicken:
1. 2 1/2 pounds of boneless chicken
2. 1 tbs black pepper
3. 6 c water
4. 4 tbs chicken bouillon powder
5. 4 bay leaves
6. 1 tsp onion powder
7. 1 tsp garlic powder
8. 1 tsp cardamom powder
9. 1/2 tsp turmeric
Boil for 45 minutes, shred the chicken and set aside both the chicken and the broth.
For the rice:
1. 2 c parboiled basmati rice
2. 4 cups of the chicken broth
3. 1/4 tsp turmeric
4. 1/4 tsp salt
Bring to a boil on high, once it comes to a boil.
Cover and lower the heat for twenty minutes. Fluff the rice and set aside.
For the bread:
1. 5 pita breads cut into one inch squares
2. Vegetable oil to fry the pita bread.
Fry the bread till golden and set aside.
For the yogurt sauce:
1. 6 c of plain yogurt any type you prefer
2. 1/3 c tahini paste
3. 5 cloves of garlic crushed
4. 1 tsp salt
Mix well and cover. Set aside until assembling. Try not to leave it out more than an hour before serving other wise refrigerate it until needed.
Toppings:
1 c of almonds or pine nuts
1/4 c vegetable oil
1/4 c chopped parsley
When all the Fateh is assembled. Take the oil and the nuts. Pan fry until golden. Immediately pour the nuts with the oil directly ontop of the Fateh and garnish with the parsley.
Time to assemble. In either individual sized bowls or a casserole dish. Layer in the following order.
1. Fried or toasted pita bread
2. A little drizzle of leftover chicken broth just enough to wet the bread.
3. The chicken. Pan fry to reheat in a tablespoon of oil with a 1/4 tsp of each: black pepper, salt, onion powder, garlic powder. Mix well and top the broth and bread.
4. The rice.
5. The sauce.
6. The fresh almonds or pine nuts w the frying oil.
7. Parsley
8. Devour
