A sweet, syrup-soaked semolina cake that originated in Egypt, and is also common in other countries.

Hareesa Cupcakes

⁃ 2c Semolina
⁃ 1c sugar
⁃ 1c coconut shreds/ or 1 c flour
⁃ 1c canola oil
⁃ 1c whole milk
⁃ 1c yogurt/sour cream
⁃ 1/2 tsp baking soda
⁃ 1tsp baking powder
Mix all ingredients in a bowl, and separate into a cupcake tin that has been sprayed with baking spray. This mixture should fill at-least 22 cupcakes or 48 mini bites.
Once divided let them rest for 30 mins. Top with almond halves and bake in a preheated 350f oven till golden brown. And soak with simple syrup.

Simple Syrup
⁃ 3c sugar
⁃ 1 1/2c water
⁃ Thin slice of lemon
Continue to stir on medium heat till the syrup coats the back of the spoon. Store leftover Syrup in an airtight glass jar.
